Sample Menu Projects

The library has several dozen menu projects from former students. The projects are located in drawers behind the circulation desk in the library. The menu projects are available for browsing in the library, but may not be photocopied or checked out.

Recipe Costing

In addition to the information in Lesson 5 of the Level 2 book, the library has several recipe costing resources. The Book of Yields lists yields and prices for many popular ingredients. Two copies are available in the reference section of the library. A sample costing layout, copied from a former student’s project, is available at the circulation desk. The library also has a number of books about culinary math. Just ask at the circulation desk if you need assistance.
